I, too, love a lot of those quotes mentioned, but I think one of my favourite ones is the scene where Swallow and Elspeth meet in Ashling (probably my fav book of the series):

I also love a lot of previous quotes mentioned in this thread, like the performing ape one, Dameon - 'Ever Obernewtyn was empty when you were not there', Maruman - 'Stupid funaga, all funaga are stupid', and all the intimate scenes between Rushton and Elspeth, especially at the end of Ashling when they basically declare their love for each other...also a quote I find funny is what Iriny says in The Stone Key:
