THE KING OF BREAD AND BUTTER PUDDING RECIPES (in my own mind hehe)
*woooo, yeahhh - crowd goes wild*
This is a Bill Granger's chocolate bread and butter pudding
And it is easy as pie..I mean pudding
3 eggs
375ml (1 1/2 cups) thin cream (pouring cream)
375ml (1 1/2 cups) milk
110g (1/2 cup) castor sugar
2 tsp vanilla extract
6 croissants (or I get the packet of 10 mini croissants that are usually going cheap on the weekends at woolworths/safeway)
200g dark chocolate, roughly chopped (get a nestle club brand or a dark dove chocolate - do not use a milk chocolate. I say that because the it is already quite sweet and it takes the bitterness away from the dark chocolate)
preheat oven 160*C
Whisk the eggs, milk, cream, vanilla, and sugar together. Tear the croissants into quarters for the large ones and in halfs/thirds if you got small ones. Place half the croissants into a heat proof deep dish (I use a casserole pot) and sprinkle the chocolate evenly over the top. Pour in the liquid mixture then add the remaining croissants to the top. Let soak for 15 mins. Then cook in oven for 40 mins. I serve it warm with more cream :roll: .
EDIT: Although not photogenic,
here is a picture of this dessert. It has a crisp outer layer where the exposed croissants bake and hide a delicious, moist inner layer - pockets of dark chocolate surrounded by rich custard. With a dash of cream and dusted with icing sugar, this is a dessert to warm the cockles of your heart.
